Sage Honey

Sage Honey

Sage honey (Salvia fruticosa) is one of the mildest of Greek honeys — light in colour, with a delicate floral sage-blossom aroma, not the sharp scent of the culinary leaf. Refined and gently sweet, with low bitterness and a clean, short finish that never covers delicate flavours. The wild shrub blooms across the dry, sunny hillsides of the Mani; a spring honey, harvested in May and June. Crystallises slowly — it stays liquid for months, then sets softly to a fine grain. An ideal table honey: over strained yoghurt with walnuts, on fresh mild cheeses, or to sweeten a warm cup of sage tea with lemon.
