Pine Honey

Pine honey has a distinctive aroma — darker when harvested in autumn, lighter in spring. Low in sugars, so it is not overly sweet and crystallises slowly. Produced from the secretions of Marchalina hellenica, primarily in Euboea. Studies of its antioxidant content show pine honey is rich in phenolic compounds such as protocatechuic, caffeic, vanillic and p-coumaric acids. High in trace minerals such as calcium and magnesium.
